Ingredients/Components
- carrots - 2 c
- chopped pecans, divided - 2 c
- Wesson or Mazola oil
- flour - 2 c
- sugar - 2 c
- large eggs - 4 item
- baking soda - 1 tsp
- cinnamon - 2 tsp
- salt - 1 tsp
- pure vanilla extract - 2 tsp
- cream cheese
- box confectioners sugar - 1 item
- stick margarine, melted - 1/2 item
How to make carrot cake:
Icing:1 pkg. cream cheese1 box confectioners sugar1/2 stick margarine, melted Mix sugar and eggs. Add oil and flour. Blend in carrots and 1 cup nuts. Add soda, salt and cinnamon. Pour into sheet cake pan. Bake at 350° for 1 hour, or until done.Icing: Blend the cream cheese and confectioners sugar. Add 1/2 stick melted margarine; blend until smooth (may add a little milk if needed to make icing thinner or smoother). Mix in 1 cup chopped nuts.
