Ingredients/Components

  • flour - 3 c
  • 1/2 salad oil - 1 item
  • sugar - 2 c
  • eggs, beaten until fluffy - 4 item
  • chopped pecans or walnuts - 1/2 item
  • junior size baby food carrots - 2 (15
  • baking soda - 2 tsp
  • cinnamon - 1 tsp
  • nutmeg - 1/2 tsp
  • Then add flour, baking soda, cinnamon and nutmeg
  • stick margarine - 1 item
  • vanilla - 1 tsp
  • box confectioners sugar - 1 item
  • chopped nuts - 1/2 c

How to make carrot cake:

Mix oil, sugar, eggs and carrots. Then add flour, baking soda, cinnamon and nutmeg. Pour into well-greased tube pan. Bake in preheated oven at 350° for 1 hour.Icing:1 (8 oz.) pkg. cream cheese1 stick margarine1 tsp. vanilla1 box confectioners sugar1/2 c. chopped nuts Soften cheese and margarine. Combine with vanilla and sugar. Beat until creamy. Sprinkle top of cake with nuts. This cake is very good baked in two 9-inch pans with icing between layers and on top.
