- flour - 3 c
- 1/2 salad oil - 1 item
- sugar - 2 c
- eggs, beaten until fluffy - 4 item
- chopped pecans or walnuts - 1/2 item
- junior size baby food carrots - 2 (15
- baking soda - 2 tsp
- cinnamon - 1 tsp
- nutmeg - 1/2 tsp
- Then add flour, baking soda, cinnamon and nutmeg
- stick margarine - 1 item
- vanilla - 1 tsp
- box confectioners sugar - 1 item
- chopped nuts - 1/2 c
How to make carrot cake:
Mix oil, sugar, eggs and carrots. Then add flour, baking soda, cinnamon and nutmeg. Pour into well-greased tube pan. Bake in preheated oven at 350° for 1 hour.Icing:1 (8 oz.) pkg. cream cheese1 stick margarine1 tsp. vanilla1 box confectioners sugar1/2 c. chopped nuts Soften cheese and margarine. Combine with vanilla and sugar. Beat until creamy. Sprinkle top of cake with nuts.
