  • coconut - 1 c
  • grated carrots - 2 c
  • baking soda - 2 tsp
  • nuts - 1 c
  • can crushed pineapple - 1 oz
  • powdered sugar
  • cooking oil
  • Mix as for cake in order given

How to make carrot cake:

Grease 2 loaf pans. Mix as for cake in order given. Bake at 350° for 55 to 60 minutes.Frosting:1/2 stick butter1 (6 oz.) pkg. cream cheese1 tsp. vanilla2 1/2 c. powdered sugar Cream together real well.
