  • sugar - 2 c
  • cinnamon - 2 tsp
  • cream cheese
  • eggs - 4 item
  • vanilla - 2 tsp
  • milk - 2 Tbsp
  • salt - 1 tsp
  • flour - 2 c
  • butter - 1/4 c
  • baking soda - 2 tsp
  • powdered sugar - 1 lb
  • chopped black walnuts - 1/2 c
  • grated raw carrot - 3 c
  • Puritan oil

How to make carrot cake:

Icing:1 (8 oz.) cream cheese1/4 c. butter2 Tbsp. milk2 tsp. vanilla1 lb. powdered sugar In large mixer bowl, beat sugar, oil and 4 eggs. Sift flour, salt, soda and cinnamon on a sheet of waxed paper. Add to oil-egg mix and beat well. Fold in carrots and nuts. Grease and flour a 9 x 13-inch pan. Pour batter in and smooth out. Bake at 300° for 1 hour and 10 minutes. Remove from oven to rack and cool.

Icing: Cream together cream cheese at room temperature with soft butter, milk and vanilla. Then beat in powdered sugar until smooth and creamy. Spread on cake.
