Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- cream cheese
- eggs - 4 item
- vanilla - 2 tsp
- milk - 2 Tbsp
- salt - 1 tsp
- flour - 2 c
- butter - 1/4 c
- baking soda - 2 tsp
- powdered sugar - 1 lb
- chopped black walnuts - 1/2 c
- grated raw carrot - 3 c
- Puritan oil
How to make carrot cake:
Icing:1 (8 oz.) cream cheese1/4 c. butter2 Tbsp. milk2 tsp. vanilla1 lb. powdered sugar In large mixer bowl, beat sugar, oil and 4 eggs. Sift flour, salt, soda and cinnamon on a sheet of waxed paper. Add to oil-egg mix and beat well. Fold in carrots and nuts. Grease and flour a 9 x 13-inch pan. Pour batter in and smooth out. Bake at 300° for 1 hour and 10 minutes. Remove from oven to rack and cool.Icing: Cream together cream cheese at room temperature with soft butter, milk and vanilla. Then beat in powdered sugar until smooth and creamy. Spread on cake.
