  • sugar - 2 c
  • cinnamon - 2 tsp
  • vanilla - 2 tsp
  • pkg - 1 oz
  • milk - 2 Tbsp
  • salt
  • chopped nuts
  • butter - 1/4 c
  • eggs, beaten - 3 item
  • baking powder - 1 tsp
  • baking soda
  • can crushed pineapple - 1 oz
  • sifted flour - 3 c
  • salad oil
  • grated raw carrots - 2 c
  • confectioner sugar

How to make carrot cake:

Frosting:4 1/2 c. confectioner sugar1 (8 oz.) pkg. cream cheese1/4 c. butter2 Tbsp. vanilla1 c. chopped nuts2 Tbsp. milk Grease and lightly flour pan. Mix together flour, sugar, cinnamon, baking powder, soda and salt. Drain pineapple, saving syrup. Add pineapple syrup to dry ingredients. Add eggs, oil and vanilla; beat 3 minutes. Stir in pineapple, carrots and nuts. Bake at 325° for 45 minutes in 9 x 13-inch pan or larger. Cool.

Frosting: Beat sugar, cream cheese, butter, milk and vanilla together until smooth. Fold in walnuts.
