  • sugar - 2 c
  • cinnamon
  • eggs - 4 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • salt - 1 tsp
  • flour
  • coconut - 1 c
  • soda - 1 tsp
  • grated carrots
  • baking powder - 1 tsp
  • salad oil
  • small can crushed pineapple - 1 item

How to make carrot cake:

Blend together sugar, oil and eggs. Sift salt, flour, baking powder, soda and cinnamon together. Add to sugar mixture and beat for 1 minute. Add pineapple, coconut, vanilla, carrots and pecans. Pour mixture into lightly floured Bundt pan and bake for 35 to 40 minutes at 350°. Test by toothpick.
