- sugar - 2 c
- cinnamon
- eggs - 4 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- salt - 1 tsp
- flour
- coconut - 1 c
- soda - 1 tsp
- grated carrots
- baking powder - 1 tsp
- salad oil
- small can crushed pineapple - 1 item
How to make carrot cake:
Blend together sugar, oil and eggs. Sift salt, flour, baking powder, soda and cinnamon together. Add to sugar mixture and beat for 1 minute. Add pineapple, coconut, vanilla, carrots and pecans. Pour mixture into lightly floured Bundt pan and bake for 35 to 40 minutes at 350°. Test by toothpick.Recipe categories: Desserts, Cakes, Carrots.
