  • cinnamon - 2 tsp
  • cream cheese - 1 (8

  • vanilla - 1 tsp
  • salt - 1 tsp
  • oil
  • soda - 2 tsp
  • all-purpose flour - 2 c
  • carrots, grated - 3 c
  • pecans, chopped - 1 c
  • Mix well
  • box confectioners sugar, sifted - 1 item

How to make carrot cake:

Beat sugar, oil and eggs; add salt, cinnamon and soda. Mix well. Add flour gradually, then carrots and mix. Bake 3 layers at 325° for 30 to 35 minutes.Frosting:1 stick margarine1 box confectioners sugar, sifted1 (8 oz.) cream cheese1 c. pecans, chopped1 tsp. vanilla Melt margarine and cream cheese; add sugar, pecans and vanilla.
