Ingredients/Components

  • sugar
  • cinnamon - 2 tsp
  • eggs - 3 item
  • salt - 1/2 tsp
  • flour - 2 c
  • nutmeg - 1/2 tsp
  • baking soda - 2 tsp
  • chopped walnuts - 3/4 c
  • shredded carrots - 2 c
  • mayonnaise - 3/4 c
  • crushed pineapple undrained - 1 c

How to make carrot cake:

Mix together flour, baking soda, spices and salt. Set aside. In a separate bowl, beat together eggs, sugar, mayonnaise and pineapple; gradually beat in dry ingredients until well mixed. Stir in with a spoon carrots and walnuts. Turn into 2 greased 9-inch round cake pans. Bake at 350° for 30 to 35 minutes. Cool 10 minutes before removing from pans.
