Ingredients/Components
- sugar
- cinnamon
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- nutmeg - 1/4 tsp
- grated carrots - 3 c
- baking soda - 1 tsp
- vegetable oil - 1 c
- margarine, softened - 4 Tbsp
- powdered sugar
- Grease and flour 9 x 13 x 2-inch pan
How to make carrot cake:
Heat oven to 350°. Grease and flour 9 x 13 x 2-inch pan. Mix sugar, oil and eggs until blended; beat 1 minute. Stir in remaining ingredients except carrots. Beat 1 minute. Stir in carrots. Pour into pan. Bake until wooden pick inserted in center comes out clean, 35 to 45 minutes.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese, softened4 Tbsp. margarine, softened1 1/2 c. powdered sugar Beat cream cheese and margarine until smooth.
