  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour - 2 c
  • nutmeg - 1/4 tsp
  • grated carrots - 3 c
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • margarine, softened - 4 Tbsp
  • powdered sugar
  • Grease and flour 9 x 13 x 2-inch pan

How to make carrot cake:

Heat oven to 350°. Grease and flour 9 x 13 x 2-inch pan. Mix sugar, oil and eggs until blended; beat 1 minute. Stir in remaining ingredients except carrots. Beat 1 minute. Stir in carrots. Pour into pan. Bake until wooden pick inserted in center comes out clean, 35 to 45 minutes.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese, softened4 Tbsp. margarine, softened1 1/2 c. powdered sugar Beat cream cheese and margarine until smooth. Gradually beat in powdered sugar until smooth and spreadable.
