  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • packed brown sugar - 1/2 c
  • salt - 1/2 tsp
  • flour - 3 c
  • butter - 1/4 c
  • nutmeg - 1/2 tsp
  • baking soda - 1 tsp
  • vegetable oil
  • powdered sugar - 1 c
  • dash of salt - 1 item
  • chopped walnuts - 1 c
  • light cream - 1/3 c
  • diced, peeled apples

How to make caramel apple cake:

Caramel Icing:1/2 c. packed brown sugar1/3 c. light cream1/4 c. butter dash of salt1 c. powdered sugar chopped walnuts Combine oil and sugars; add eggs one at a time, beating well. Combine dry ingredients. Add to batter and stir well. Fold in apples, walnuts and vanilla. Bake in greased and floured tube pan at 325° for 1 1/2 hours or until cake tests done. Cool in pan 10 minutes.

Icing: In top of double boiler over simmering water, heat brown sugar, cream, butter and salt until sugar is dissolved. Cool to room temperature. Beat in powdered sugar until smooth; drizzle over cake and sprinkle top with walnuts.
