Candied grapefruit peel
Ingredients/Components

- pkg - 1 oz
- salt - 3/4 tsp
- water
- grapefruits - 3 item
How to make candied grapefruit peel:
Using point of knife, score grapefruit peel in 4 lengthwise sections. If peel is quite thick, cut away some of the membrane. Cut peel into 1/4-inch strips. Place cut peel in large saucepan, cover with cold water and bring to boiling. Boil 20 minutes; drain. Repeat twice more, using fresh cold water each time. Drain thoroughly.Combine sugar, 2 1/4 cups water and salt in 2-quart saucepan. Cook and stir over medium heat to dissolve sugar. Add peel, bring to boiling. Simmer 20 minutes or until peel is just translucent. Gradually add dry gelatin, stirring over low heat until dissolved. Remove peel from syrup; drain on baking rack. Let stand 20 minutes. Roll each strip in granulated sugar. Let dry on rack several hours or overnight. Store covered.
