Ingredients/Components

  • sugar
  • salt - 1 Tbsp
  • dry mustard - 1 Tbsp
  • chopped onion - 1 c
  • celery seed
  • white vinegar - 2 c
  • mustard seed
  • turmeric - 1/2 tsp
  • whole kernel corn - 4 c
  • red bell pepper, diced - 1/2 c
  • green bell pepper, diced - 1/2 c

How to make calico corn:

Combine all ingredients. Bring to a boil; simmer for 20 minutes. Pour hot into hot, sterilized jars, leaving 1/4 inch headspace. Adjust caps; process 15 minutes in boiling water bath. Yields 6 half pints.
