Cajun red beans and rice
Ingredients/Components
- dried beans - 1 lb
- chopped onion - 3 c
- parsley - 1 c
- oregano or thyme - 1/4 tsp
- Worcestershire sauce - 1 Tbsp
- can tomato sauce - 8 oz
- smoked sausage, cut into 1/4-inch slices - 1 lb
- salt pork - 1/2 lb
- chopped green onion - 1 c
- garlic salt - 1 Tbsp
- red pepper - 1 tsp
- black pepper - 1 tsp
- hot sauce
- hot cooked rice - 1 item
How to make cajun red beans and rice:
Sort and wash beans. Cover with water and let soak overnight. Add salt pork to beans. Cook 1 hour. Stir in all other ingredients, except sausage and rice. Brown sausage in skillet. Drain grease. Add to beans and cook 1 1/2 hours. Serve over rice.Recipe categories: Side dish, Beans, Rice.
