Caesar salad for two
Ingredients/Components
- lemon - 1/2 item
- cloves garlic - 2 item
- anchovy fillets - 3 item
- coddled egg - 1 item
- olive oil preferably extra-virgin - 1/4 c
- balsamic vinegar Italy; do not substitute - 1/2 tsp
- freshly grated Parmesan cheese hard Italian - 2 3
- large head romaine lettuce * - 1 item
- croutons ** - 1/2 c
How to make caesar salad for two:
*Wash and dry. Roll in paper towels and refrigerate. Tear when ready to use.**I make my own with French bread.
In a large wooden bowl, mash the garlic cloves with a fork. Add the anchovies and continue to mash together into a fine paste. Using the back of a wooden spoon, mash the paste into the sides and bottom of a wooden bowl. Break the egg into the bowl and juice the lemon. Mix thoroughly, then add the olive oil and vinegar; blend. Mix in the Parmesan. Add the lettuce and toss the leaves so they are coated with dressing, being careful not to bruise the lettuce. Add croutons.
