Ingredients/Components
- sugar - 6 Tbsp
- vanilla - 1/2 tsp
- milk
- salt - 1/3 tsp
- butter
- cornstarch - 4 Tbsp
- egg yolks - 3 item
- brown sugar, packed
- Meringue:3 egg whites
- 9-inch pie shell, cooked
How to make butterscotch pie:
Meringue:3 egg whites6 Tbsp. sugar Cream butter and brown sugar. Add 1/2 cup milk, beaten egg yolks and salt. Add another 1/2 cup milk. Mix cornstarch with 1/2 cup milk and add to first mixture. Cook in double boiler, stirring constantly until thick. Cover and cook 20 minutes, then add vanilla. Pour into pie shell. Top with meringue and brown.Meringue: Beat egg whites until stiff. Add sugar.
Microwave Directions: Cook filling 3 minutes High. Stir, then 3 minutes High. Stir, then 2 minutes Power 8. Stir, then 1 minute Power 8. Stir.
