Butter bean salad
Ingredients/Components
- frozen baby butter beans - 10 oz
- celery, chopped fine - 1/4 c
- spring onions, chop - 1/4 c
- chopped walnuts - 1/4 c
- bacon, fried and crumbled or bacon bits - 1 lb
- mayo - 1/2 c
- hard-boiled eggs, chopped - 3 item
- salt and pepper to taste - 1 item
How to make butter bean salad:
Add beans to boiling water; boil for 10 minutes, then rinse immediately with cool water. Mix beans, celery, onions and walnuts with mayonnaise. Chop eggs and add to top of beans. Add salt and pepper. Sprinkle bacon on top. Refrigerate. Toss when ready to serve.Low-fat: Use light mayo and bacon bits.
