Butter bean salad
Ingredients/Components
- lemon juice - 1/3 c
- pepper - 1 tsp
- olive oil - 2 Tbsp
- minced parsley - 1/2 c
- thinly sliced green onions - 1/2 c
- cans butter beans - 2 oz
- large tomatoes, cored and diced - 2 item
- packed Feta cheese - 1/3 c
- or 2 green onions, ends trimmed - 1 item
How to make butter bean salad:
Drain beans. Rinse with cool water; drain well. In a bowl, mix beans with oil, lemon juice, parsley, sliced green onions, tomatoes and enough pepper to make salad slightly hot to taste. If made ahead, cover and chill up to 4 hours, then mix. Crumble cheese onto salad. Garnish with whole onions.Recipe categories: Salads, Side dish, Onions.
