Ingredients/Components

  • salt - 1/2 tsp
  • cornstarch - 2 Tbsp
  • chopped onion - 1/4 c
  • dash of pepper - 1 item
  • low sodium chicken broth - 1 c
  • nonfat milk - 2 c
  • diced celery - 1/4 c
  • grated Swiss cheese - 1/4 c
  • dash of ground thyme - 1 item
  • chopped broccoli or 1 10 oz

How to make broccoli soup:

Place vegetables and broth in saucepan. Bring to boiling. Reduce heat, cover and cook until vegetables are tender (about 8 minutes). Mix milk, cornstarch, salt, pepper and thyme. Add to cooked vegetables. Cook, stirring constantly, until soup is lightly thickened and mixture just begins to boil. Remove from heat. Add cheese and stir until melted. Makes 4 servings, 1 cup each.
