Broccoli soup
Ingredients/Components
- half and half - 1 qt
- milk - 1 qt
- flour - 3/4 c
- butter - 1/4 lb
- lemon juice
- parsley flakes - 1/4 c
- diced celery - 3/4 c
- white pepper - 1/2 tsp
- chicken base - 3 Tbsp
- fresh broccoli - 2 qt
- cooking sherry optional - 1/2 c
How to make broccoli soup:
Clean and cut up broccoli. Add first 7 ingredients in a large saucepan; cook on low heat. Stir occasionally. Boil broccoli for 12 minutes or until tender and immediately add to mixture. Increase heat to medium-high. Simmer and stir. Melt butter; mix with flour to get creamy mixture. Add to soup. When soup thickens, add sherry. Mix well.
