  • half and half - 2 c
  • milk - 2 c
  • flour - 1/2 c
  • butter - 1/4 c
  • water - 4 c
  • chopped celery - 1 c
  • sliced onion - 1/2 c
  • instant chicken bouillon - 4 tsp
  • fresh broccoli - 3 c
  • cubed ham, fully cooked - 2 c
  • Velveeta pimento cheese, cubed - 3/4 c

How to make broccoli soup:

In large frypan, saute butter, onion and celery. Blend in flour, stirring well. Add milk and half and half slowly; keep stirring until thick and smooth. Remove from heat; cover and let set. In a 4-quart (or larger) saucepan, cook broccoli in 4 cups water for 6 minutes. Add chicken bouillon; cook and gradually add the milk-onion-celery mixture. Simmer on low heat. Add cheese and ham until cheese is completely melted. Serves 8.
