  • pkg - 2 oz
  • can cream of mushroom soup - 1 item
  • shredded cheese 1/2 c - 2 oz
  • milk - 1/4 c
  • mayonnaise - 1/4 c
  • beaten egg - 1 item
  • bread crumbs - 1/4 c
  • melted margarine - 1 Tbsp

How to make broccoli puff:

Cook broccoli according to package directions, omitting salt; drain well. Place broccoli in 10 x 6 x 1 1/2-inch baking dish. Stir together soup, milk, mayonnaise, beaten egg and cheese until well blended. Pour over broccoli. Combine bread crumbs and margarine. Sprinkle evenly over soup mixture. Bake in moderate (350°) oven for 45 minutes until crumbs are lightly browned.

To trim the fat from this recipe: Use Healthy Choice mushroom soup, low-fat cheese, nonfat mayonnaise, Egg Beaters egg substitute, omit margarine (or cut in half) and skim or powdered milk.
