Ingredients/Components

  • pork sausage - 1/4 1/2
  • finely chopped onion - 2 Tbsp
  • finely chopped green pepper - 2 Tbsp
  • finely chopped yellow pepper optional - 2 Tbsp
  • finely chopped red pepper optional - 2 Tbsp
  • large eggs - 2 item
  • milk - 2 Tbsp
  • salt - 1/8 tsp
  • dash of pepper - 1 item
  • butter or margarine - 1 Tbsp
  • 6 or 7-inch flour tortillas - 4 item
  • small to medium tomato, peeled and chopped - 1 item
  • shredded Cheddar cheese or a mix of Monterey Jack and Cheddar - 1/2 c

How to make breakfast burritos:

In skillet, cook pork sausage, onion and pepper until meat is brown and onion and peppers are tender. Drain off fat; set aside. In bowl, beat together eggs, milk, salt and pepper.

In an 8 or 10-inch skillet, melt butter or margarine over medium heat; pour in egg mixture. Cook, without stirring, until mixture begins to set on the bottom and around edges. Using a large spoon or spatula, lift and fold partially cooked eggs so uncooked portion flows underneath. Continue cooking over medium heat until eggs are almost cooked throughout. Remove from heat.

Spoon 1/4 of meat mixture onto each tortilla near one edge. Top with cooked eggs and chopped tomato. Roll tortilla around filling. If necessary, secure with a wooden pick.

Arrange on baking tray. Sprinkle with cheese. Bake in 350° oven about 15 minutes or until heated through. Makes 2 servings.
