Bread and butter pickles
Ingredients/Components
- sugar - 5 c
- salt - 1/2 c
- vinegar - 5 c
- alum
- celery seed - 1 tsp
- small onions - 8 item
- green peppers - 2 item
- turmeric
- cucumbers - 1 gal
- white mustard seed - 2 Tbsp
How to make bread and butter pickles:
Slice cucumbers, but not too thin. Cut peppers and onions in small pieces. Sprinkle the vegetables with the 1/2 cup salt and use a few lumps of ice. Let this stand for 3 hours, then drain off this water. Make a pickling syrup using alum, sugar, turmeric, mustard seed, celery seed and vinegar. Pour all this in a kettle and stir often, using a wooden spoon. Let this come to a boil, but do not boil. Put in jars and seal.Recipe categories: American, Condiments, etc., Vegetables.
