  • salt - 1/2 tsp
  • molasses - 1 Tbsp
  • dry mustard - 1/2 tsp
  • small onion - 1 item
  • pea beans - 1 pt
  • salt pork - 1/8 lb

How to make boston baked beans:

Soak beans in cold water overnight. Drain and put in bean pot. Pour boiling water over salt pork. Scrape the rind until white, score in 1/2-inch strips and bury in beans. Leave only rind showing. Mix salt, mustard and molasses in a cup filled with hot water and mix well. Pour over the beans. Add water to cover. Bake at 250° to 350° for 6 to 8 hours. Add more water to cover until the last hour. Remove cover and raise pork to top to get crisp.

Quick Method: Place dry beans covered with cold water. Slowly bring to a boil and then simmer 15 minutes. Drain. Add fresh water (boiling). Add salt pork and simmer until beans are tender. Put in bean pot. Season and bake.
