  • sugar - 1 c
  • eggs - 2 item
  • vanilla extract - 1 tsp
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • all-purpose flour - 2 c
  • butter or margarine, softened - 1/2 c
  • powdered sugar optional - 1 item
  • ground cinnamon - 1 tsp
  • frozen or fresh blueberries - 1 c
  • carton commercial sour cream - 8 oz

How to make blueberry coffee cake:

Cream butter; gradually add 1 cup sugar, beating well at medium speed on mixer. Add eggs, one at a time, beating after each addition.

Combine flour, baking powder and soda. Gradually add to creamed mixture, mixing until blended. Stir in sour cream and vanilla.

Spoon half of batter into a greased and floured 10-inch Bundt pan. Sprinkle with blueberries, 1 tablespoon sugar and cinnamon. Top with remaining batter. Bake at 350° for 45 to 50 minutes. Cool in pan for 10 minutes; remove from pan and let cool completely on a wire rack. Sprinkle with powdered sugar, if desired.
