Blueberry coffee cake
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla extract - 1 tsp
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- all-purpose flour - 2 c
- butter or margarine, softened - 1/2 c
- powdered sugar optional - 1 item
- ground cinnamon - 1 tsp
- frozen or fresh blueberries - 1 c
- carton commercial sour cream - 8 oz
How to make blueberry coffee cake:
Cream butter; gradually add 1 cup sugar, beating well at medium speed on mixer. Add eggs, one at a time, beating after each addition.Combine flour, baking powder and soda. Gradually add to creamed mixture, mixing until blended. Stir in sour cream and vanilla.
Spoon half of batter into a greased and floured 10-inch Bundt pan. Sprinkle with blueberries, 1 tablespoon sugar and cinnamon. Top with remaining batter. Bake at 350° for 45 to 50 minutes. Cool in pan for 10 minutes; remove from pan and let cool completely on a wire rack. Sprinkle with powdered sugar, if desired.
