Blueberry buckle
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1/2 tsp
- milk - 1/2 c
- salt - 1/4 tsp
- flour - 1/2 c
- butter - 1/4 c
- baking powder
- egg - 1 item
- shortening - 1/2 c
- sifted all-purpose flour - 2 c
- fresh blueberries - 2 c
How to make blueberry buckle:
Thoroughly cream shortening and 3/4 cup sugar; add egg and beat until light and fluffy. Sift together 2 cups flour, baking powder and salt; add to creamed mixture alternately with milk. Spread in greased 11 x 7 x 1 1/2-inch pan. Top with berries. Mix 1/2 cup sugar, 1/2 cup flour and cinnamon; cut in butter until crumbly; sprinkle over berries. Bake at 350° for 45 minutes.
