Blueberry brunch cake
Ingredients/Components
- sugar - 1/3 c
- chopped pecans - 1/2 c
- milk - 1/2 c
- salt - 1/2 tsp
- baking powder - 2 tsp
- vegetable oil - 1/3 c
- egg - 1 item
- all-purpose flour - 1 c
- butter or margarine, softened - 2 Tbsp
- lemon juice - 1 Tbsp
- ground cinnamon - 1/4 tsp
- fresh blueberries - 1 c
How to make blueberry brunch cake:
Combine first 4 ingredients in a medium bowl and set aside. Combine egg, milk, oil and lemon juice; add to dry ingredients, mixing well. Pour batter into a greased 8-inch square baking pan; sprinkle with blueberries. Combine remaining ingredients; sprinkle over blueberries. Bake at 350° for 40 minutes.
