  • sugar - 1/3 c
  • chopped pecans - 1/2 c
  • milk - 1/2 c
  • salt - 1/2 tsp
  • baking powder - 2 tsp
  • vegetable oil - 1/3 c
  • egg - 1 item
  • all-purpose flour - 1 c
  • butter or margarine, softened - 2 Tbsp
  • lemon juice - 1 Tbsp
  • ground cinnamon - 1/4 tsp
  • fresh blueberries - 1 c

How to make blueberry brunch cake:

Combine first 4 ingredients in a medium bowl and set aside. Combine egg, milk, oil and lemon juice; add to dry ingredients, mixing well. Pour batter into a greased 8-inch square baking pan; sprinkle with blueberries. Combine remaining ingredients; sprinkle over blueberries. Bake at 350° for 40 minutes. Yield: 9 servings.
