  • sugar - 1 c
  • eggs - 4 item
  • vanilla - 1/2 tsp
  • salt - 1/4 tsp
  • flour - 1 c
  • baking powder
  • boiling water - 1/2 c
  • powdered sugar - 7 c
  • soft margarine
  • egg yolks 1 reserved - 2 item
  • salted cocktail peanuts, chopped finely to coat or more - 16 oz

How to make blarney stones:

Frosting:1 1/2 c. soft margarine2 egg yolks (1 reserved)7 c. powdered sugar1 1/2 tsp. vanilla16 oz. salted cocktail peanuts, chopped finely to coat (or more) Separate the eggs. Beat 3 yolks until thick. Add sugar, beating. Combine dry ingredients. Add to egg yolk mixture alternately with boiling water. Add vanilla. Fold in stiffly beaten egg whites (4). Bake in jelly roll pan (cookie sheet with high sides) lined with wax paper for 25 minutes at 350°. Cool. Cut into 1-inch squares. Frost all 6 sides and roll in finely chopped peanuts. Yields 6 dozen.

Thin frosting with a little milk, if necessary.
