Ingredients/Components

  • baked pie shell - 1 item
  • sugar
  • cornstarch - 6 Tbsp
  • water - 2 c
  • lemon juice - 1/3 c
  • eggs, separated - 3 item
  • butter - 3 Tbsp
  • vinegar
  • lemon extract
  • cold water - 2 Tbsp
  • boiling water - 1/2 c
  • egg whites - 3 item
  • vanilla - 1 tsp
  • pinch of salt - 1 item

How to make best ever lemon pie:

Meringue:1 Tbsp. cornstarch2 Tbsp. cold water1/2 c. boiling water3 egg whites1 tsp. vanilla6 Tbsp. sugar pinch of salt Mix sugar and cornstarch together in double boiler; add water. Combine egg yolks with juice and beat. Add to rest of mixture. Cook until thick over boiling water for 25 minutes. Add lemon extract, butter and vinegar. Mix well; cool and pour into pie shell.

Meringue: Blend cornstarch and cold water in saucepan. Add boiling water and cook. Stir until clear and thick; let stand until cold. Beat egg whites until foamy. Slowly add sugar and beat until stiff. Turn beater on low, add salt and vanilla. Gradually beat in cold cornstarch. Beat on high. Spread on pie. Bake at 350° for 10 minutes.
