Ingredients/Components

  • sugar
  • vanilla - 1 tsp
  • butter - 3 Tbsp
  • cornstarch - 6 Tbsp
  • eggs, separated - 3 item
  • water - 2 c
  • cold water - 2 Tbsp
  • pinch of salt - 1 item
  • boiling water - 1/2 c
  • vinegar - 2 tsp
  • egg whites - 3 item
  • lemon juice - 1/3 c
  • lemon extract
  • baked pie shell - 1 item
  • Add 2 cups water

How to make best ever lemon pie:

Mix sugar and cornstarch together in top of double boiler. Add 2 cups water. Combine egg yolks with juice and beat. Add to rest of mixture. Cook until thick, about 25 minutes. Add lemon extract, butter and vinegar. Stir thoroughly. Put in shell and cool. Cover with meringue and brown.Never Fail Meringue:1 Tbsp. cornstarch2 Tbsp. cold water1/2 c. boiling water3 egg whites6 Tbsp. sugar1 tsp. vanilla pinch of salt Blend cornstarch and cold water in saucepan. Add boiling water and cook, stirring until clear and thick. Let stand until cold. With electric beater at high speed, beat egg whites until foamy. Gradually add sugar and beat until stiff. Turn mixer to low speed, add salt and vanilla. Gradually beat in cornstarch mixture. Beat well again at high speed. Spread over cooled pie filling. Bake at 350° for 10 minutes. This cuts beautifully and is never sticky. Enjoy.
