Ingredients/Components

  • good steak, thinly sliced - 1 lb
  • salt
  • pepper - 2 tsp
  • butter - 8 Tbsp
  • flour - 3 Tbsp
  • beef broth - 1 c
  • mustard - 1 tsp
  • large onion, thinly sliced - 1 item
  • mushrooms, sliced - 1/2 lb
  • sour cream - 1 c

How to make beef stroganoff:

Lay the sliced steak between sheets of waxed paper. Season with salt and pepper; roll up and set aside for 2 hours at room temperature. In a saucepan, melt 3 tablespoons butter. Stir in flour and cook, stirring, for 15 seconds. Add mustard and broth; stir until thickened and set aside.

In a skillet, melt 4 tablespoons butter; saute onion until limp. Discard onion. Quickly saute beef slices in same pan. Transfer beef to sauce. Melt remaining butter and saute mushrooms until tender. Add them to sauce mixture. Mix in sour cream; heat without boiling. Serves 2.

For lower fat version, make the following substitutions: turkey for meat, canola oil for butter, nonfat sour cream for high fat and chicken broth for beef broth.
