Spicy chicken fingers
Ingredients/Components
- milk - 3/4 c
- salt - 1/2 tsp
- all-purpose flour - 3/4 c
- dried whole oregano - 1 tsp
- garlic powder - 1/2 tsp
- chili powder - 3 Tbsp
- ground cumin - 2 tsp
- dried parsley flakes - 2 tsp
- black pepper - 1/2 tsp
- red pepper - 1/4 tsp
- boned and skinned chicken breasts, cut into strips - 2 lb
- masa harina or cornmeal - 2/3 c
- creamy green salsa - 1 item
How to make spicy chicken fingers:
Combine chicken and milk. Set aside. Combine masa harina and next 7 ingredients. Combine flour and black pepper in a separate bowl. To coat chicken, dip milk soaked pieces first in flour, back in milk and then in masa harina mixture. Place on wax paper. Freeze for at least 4 hours. Place frozen chicken fingers on a lightly greased baking sheet. Bake at 400° for 30 minutes or until crisp. Serve chicken fingers with creamy green salsa.
