Beef stew
Ingredients/Components
- sugar - 1 Tbsp
- salt - 2 tsp
- pepper - 1/2 tsp
- beef broth - 1/2 c
- can crushed tomatoes - 1 oz
- quick cooking tapioca - 1/4 c
- dry red wine or water - 2/3 c
- small bay leaves - 2 item
- cubed lean boneless beef chuck - 3 lb
- medium onions, peeled and quartered - 3 item
- dried fine herbs or Italian herb seasoning - 2 tsp
- carrots, quartered crosswise - 1 lb
- large ribs celery, 1-inch chunks - 4 item
How to make beef stew:
Mix together all ingredients, except last 4. Stir in beef, then add vegetables. Cover and bake 3 hours, stirring twice in Dutch oven (5 to 6-quart). Makes 8 servings.Note: Great made a day ahead. Can also add 12 ounces small mushrooms and 2 tablespoons coarse grain Dijon mustard before reheating. Simmer 10 minutes, then add 10 ounce package frozen green peas and simmer 4 more minutes. Can serve over buttered noodles or rice.
