Ingredients/Components

  • all-purpose flour - 1/4 c
  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • beef cubes - 2 lb
  • carrots, cut - 4 item
  • olive oil - 1/4 c
  • Burgundy wine - 2 c
  • can tomatoes, drained and chopped - 1 1/2
  • can beef consomme - 1 1/2
  • cloves garlic, crushed - 2 item
  • dry mustard - 1 tsp
  • dried thyme - 1/2 tsp
  • bay leaf, crumbled - 1 item
  • small onions - 1 pkg
  • small half mushrooms - 1 lb

How to make beef burgundy:

Place flour, salt and pepper in plastic food storage bag. Dredge beef cubes in flour mixture. In large saucepot, brown beef and carrots in oil in batches for 6 to 8 minutes or until browned. Remove to bowl.

Add wine, tomatoes, consomme, garlic, mustard, thyme and bay leaf to saucepot. Bring to boil, scraping browned bits from bottom. Return meat and carrots to saucepot. Cover. Reduce heat and simmer 1 hour and 45 minutes.

Add onions and mushrooms. Cover and cook 15 minutes. Remove lid and continue cooking 5 minutes or until thickened and vegetables are tender. Serve with parsley noodles.
