Ingredients/Components

  • granulated sugar - 1/4 c
  • salt - 2 Tbsp
  • molasses - 1/4 c
  • orange juice - 1 c
  • chili powder - 2 Tbsp
  • large onions, chopped - 4 item
  • liquid smoke - 2 Tbsp
  • white vinegar
  • can tomato puree - 1 oz
  • packed dark brown sugar - 1/4 c
  • vegetable oil for sauteing - 3 Tbsp
  • cans tomatoes with juice or an equal amount fresh tomatoes - 3 oz
  • freshly cracked black pepper may substitute 2 tsp - 2 Tbsp
  • brown Dijon style mustard - 1/2 c
  • case cold beer optional - 1 item

How to make barbecue sauce:

In a large, heavy bottom pan, saute the chopped onions in the oil on medium-high heat until golden brown (about 7 to 10 minutes). Add remaining ingredients (not the beer!); bring to a boil. Reduce heat; let simmer, uncovered, for 4 hours. Every 30 minutes or after each beer, whichever comes first, stir to prevent sticking. After the first 2 1/2 hours of simmering, taste periodically (let it cool first, though). Follow with a swallow of cold beer. Puree in a blender or food processor in small batches.* Pour the sauce into another container. A clean 1-gallon plastic milk jug works quite well.

Variation: Add 1 cup mustard (I use cheap yellow mustard) and 1/2 cup of honey for each 16 ounces of sauce.

*If canning immediately after cooking, be very careful when pureeing, as the liquid could be quite hot and could splatter. Carefully pour the liquid into the blender, and, after placing the lid on the blender, cover with a dish towel or dish cloth to prevent any splattering when the blender is started.

Canning (Hot Water Bath): Use clean, sterile jars. They may be washed and boiled or cleaned in an automatic dishwasher with a water temperature of 140° or higher. Place lids in scalding water (do not boil). Pour sauce in jars, leaving 1 inch of space at the top. Place lids on jars and screw rings on (not too tightly). Place jars in canner with boiling water and boil for 35 minutes. Remove; let cool.
