Ingredients/Components

  • sugar - 3/4 c
  • vanilla - 1/2 tsp
  • milk - 2 c
  • flour - 3 Tbsp
  • eggs, separated - 3 item
  • egg - 1 item
  • dash of salt - 1 item
  • vanilla wafers - 1 item
  • to 6 medium-size ripe bananas, sliced - 5 item

How to make banana pudding:

In top of double boiler, combine 1/2 cup sugar, the flour and salt. Add 1 whole beaten egg and the three egg yolks. Stir in milk. Over simmering water, cook, uncovered, stirring constantly, about 15 minutes, until thickened. Stir in vanilla.

Put a small amount of custard on bottom of baking dish (1 1/2-quart) and cover with layer of vanilla wafers and then layer of bananas. Continue to layer and end with custard.

Beat egg whites. Gradually add the 1/4 cup of sugar until they form stiff peaks. Put beaten egg whites on top of the pudding. Be sure to cover entire top and bake in a hot oven (425°) for 5 minutes, until lightly browned.
