Ingredients/Components

  • sugar - 3/4 c
  • vanilla - 1 tsp
  • milk - 2 c
  • butter or margarine - 2 Tbsp
  • salt - 1/4 tsp
  • cornstarch - 3 Tbsp
  • cream of tartar - 1/2 tsp
  • slightly beaten egg yolks - 3 item
  • Cook and stir over medium heat until mixture boils and thickens

How to make banana pudding:

In saucepan, combine sugar, cornstarch and salt; gradually stir in milk. Cook and stir over medium heat until mixture boils and thickens. Cook 2 minutes longer. Remove from heat.

Stir small amount hot mixture into yolks, return to hot mixture. Cook 2 minutes stirring constantly. Remove from heat. Add butter and vanilla; cool to room temperature.

In large oven proof bowl, crumble layer of vanilla wafers in bottom of bowl. Layer with bananas, 1/2 pudding mix, another layer of vanilla wafers, bananas, pudding mix.Meringue:3 egg whites1/2 tsp. cream of tartar1/2 tsp. vanilla6 Tbsp. sugar Beat egg whites with cream of tartar and vanilla till soft peaks form. Gradually add sugar, beating until peaks form and all sugar is dissolved. Spread on pudding. Bake at 350° about 15 minutes until meringue is golden Cool.
