Ingredients/Components

  • sugar
  • eggs - 4 item
  • vanilla extract - 2 tsp
  • salt - 3/4 tsp
  • confectioners sugar
  • buttermilk - 1/2 c
  • baking soda - 2 tsp
  • all-purpose flour
  • butter or margarine, softened - 1 c
  • toasted chopped pecans - 1 item
  • chopped pecans, toasted - 1 c
  • Add eggs and beat
  • mashed ripe bananas about 4 medium - 2 c

How to make banana pecan torte:

In mixing bowl, cream butter and sugar. Add eggs and beat. Beat in bananas and vanilla. Add dry ingredients to creamed mixture alternately with buttermilk. Stir in pecans. Pour into 3 greased and floured 9-inch round cake pans. Bake at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean. Cool in pan 10 minutes; remove to cool completely.Frosting:1 (8 oz.) pkg. cream cheese, softened1/2 c. butter or margarine, softened3 1/2 c. confectioners sugar1 tsp. vanilla extract toasted chopped pecans Beat cream cheese, butter and sugar in mixing bowl. Add vanilla. Spread between layers and on top of cake. Sprinkle with pecans. Yields 12 to 16 servings.

I made this for my family reunion, and I can report "not a crumb" was left!
