  • flour - 2 Tbsp
  • cornstarch - 2 Tbsp
  • salt - 1/4 tsp
  • vanilla - 1 tsp
  • ripe bananas - 3 item
  • milk
  • sugar - 1/2 c
  • egg yolks, lightly beaten - 3 item
  • butter or margarine - 1 Tbsp
  • 9-inch pie crust - 1 item

How to make banana cream pie:

Or you can use 1 large package of Jell-O pudding and pie filling (banana cream, French vanilla or vanilla). You can use instant but the type you cook is better.

Mix cornstarch, sugar and salt in saucepan. Slowly blend in milk and heat, stirring, until thickened and smooth. Turn heat to lowest point heat and stir 1 to 2 minutes.

Blend a little hot mixture into egg yolks, return to pan and cook and stir 1 to 2 minutes over lowest heat until quite thick. Do not boil or mixture will curdle. Remove from heat. Mix in vanilla and butter. Place a circle of wax paper directly on mixture and cool to room temperature. Stir filling and spoon half into pie shell.

Peel bananas, slice 1/4-inch thick and arrange evenly over filling. Top with remaining filling. Top with whipped cream. Chill 20 to 30 minutes and serve.
