  • sugar - 2 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • shortening - 1/2 c
  • chopped nuts optional - 1 c
  • powdered sugar - 1 lb
  • lemon juice - 1 tsp
  • sour milk - 1 c
  • bananas, mashed - 1 c
  • mashed ripe bananas - 1/2 c
  • Add bananas and eggs and beat well

How to make banana cake:

Cream shortening, add sugar gradually and cream together until light and fluffy. Add bananas and eggs and beat well. Mix and sift dry ingredients and add alternately with milk and vanilla to sugar mixture. Add nuts last. Bake in 2 (9-inch) layer pans which have been greased. Bake at 350° for 30 minutes. Frost with favorite icing.Banana Frosting:1/4 c. butter or margarine1 lb. powdered sugar1/2 c. mashed ripe bananas1 tsp. lemon juice Cream butter until soft and fluffy. Add half the sugar and beat until blended. Add mashed bananas and lemon juice. Add remaining sugar and beat until frosting is of spreading consistency.
