Ingredients/Components
- butter - 1/2 c
- light cream - 3 c
- cracker crumbs - 1/2 c
- pecans, chopped - 1/2 c
- medium eggplant, peeled - 1 item
How to make baked eggplant:
Cut eggplant in 1-inch slices. Butter a shallow baking dish. Place slices in dish side-by-side. Brush tops with melted butter. Sprinkle with crumbs, then pecans. Pour in cream and bake 35 to 45 minutes at 325° until tender.Recipe categories: Vegetables, Main dish, Eggplant.
