Ingredients/Components

  • water - 2/3 c
  • salad oil - 2 Tbsp
  • chopped onion - 1/2 c
  • dash of pepper - 1 item
  • oregano
  • can tomato puree
  • medium eggplant, peeled and thinly sliced - 1 item
  • grated cheese Parmesan I use sharp Cheddar - 2 c

How to make baked eggplant:

Saute onion in oil; add puree, water, salt, oregano and pepper. Bring to boil. Simmer 15 minutes.

In a greased 2-quart baking dish alternate layers of eggplant, sauce, cheese, etc., ending with layer of cheese. Bake at 350° for 1 hour. For added richness add slices of cheese the last 15 minutes.
