- eggs, well beaten - 2 item
- salt and pepper - 1 item
- medium eggplant - 1 item
- cornflakes - 1 c
How to make baked eggplant:
Parboil eggplant until tender and mash through colander. Beat. Add other ingredients and bake after sprinkling top generously with cheese. Bake in a 350° oven for 1/2 hour.Recipe categories: Vegetables, Main dish, Eggplant.
