  • salt and pepper - 1 item
  • medium eggplant - 1 item
  • cornflakes - 1 c

How to make baked eggplant:

Parboil eggplant until tender and mash through colander. Beat. Add other ingredients and bake after sprinkling top generously with cheese. Bake in a 350° oven for 1/2 hour.
