Ingredients/Components
- sugar - 8 Tbsp
- salt - 4 tsp
- water
- molasses - 2/3 c
- dry mustard - 2 tsp
- pepper - 1/2 tsp
- medium size onion - 1 item
- beans California pea beans or New York State beans preferred - 2 lb
- sauteed bacon or 1/2 lb - 1/2 lb
How to make baked beans:
Soak beans overnight. In the morning, parboil them for 10 minutes with a teaspoon of baking soda. Then run cold water through the beans in a colander.Dice bacon. Put half on the bottom of a 2-quart bean pot with a whole onion. Put beans in the pot. Put the rest of the bacon on top. Mix the other ingredients with hot water and pour over the beans. Put in a 300° oven for 6 hours. Add water as necessary to keep the beans moist. Serves 10.
