Ingredients/Components

  • salt - 1/2 tsp
  • clove garlic, minced - 1 item
  • minced fresh parsley - 2 Tbsp
  • tomato juice - 1 t
  • hot pepper sauce - 1/2 tsp
  • white pepper - 1/8 tsp
  • medium avocados, peeled and chopped - 3 item
  • large green pepper, seeded and chopped - 1 item
  • large tomatoes, chopped - 2 item
  • to 5 green onions, chopped - 4 item
  • fresh lemon or lime juice - 2 Tbsp
  • medium cucumber, peeled and chopped - 1 item
  • croutons for garnish - 1 c
  • canned tomato puree - 1/2 c

How to make avocado gazpacho:

In a large bowl, combine all ingredients, except croutons. Chill thoroughly for 2 to 3 hours. Serve in chilled bowls. Garnish with croutons. Serves 8.
