Avocado gazpacho
Ingredients/Components
- salt - 1/2 tsp
- clove garlic, minced - 1 item
- minced fresh parsley - 2 Tbsp
- tomato juice - 1 t
- hot pepper sauce - 1/2 tsp
- white pepper - 1/8 tsp
- medium avocados, peeled and chopped - 3 item
- large green pepper, seeded and chopped - 1 item
- large tomatoes, chopped - 2 item
- to 5 green onions, chopped - 4 item
- fresh lemon or lime juice - 2 Tbsp
- medium cucumber, peeled and chopped - 1 item
- croutons for garnish - 1 c
- canned tomato puree - 1/2 c
How to make avocado gazpacho:
In a large bowl, combine all ingredients, except croutons. Chill thoroughly for 2 to 3 hours. Serve in chilled bowls. Garnish with croutons. Serves 8.Recipe categories: Appetizers, Soups & stews, Bisques/cream soups.
