Ingredients/Components
- salt - 1 tsp
- hot water - 2 c
- pepper - 1/4 tsp
- chopped onions - 1/2 c
- ground beef - 1/2 lb
- celery, diced - 3/4 c
- potatoes, diced - 3/4 c
- bay leaf, crumbled - 1/2 item
- pinch of basil - 1 item
- whole fresh tomatoes, stems removed - 3 item
How to make autumn soup:
Brown ground beef slowly in a little hot fat in a heavy kettle. Add onions and cook 5 minutes more. Add remaining ingredients except tomatoes and mix thoroughly, loosening the brown crustiness from bottom of kettle. Bring to a boil. Cover and simmer 20 minutes. Add tomatoes (and if necessary, more water). Simmer 10 minutes longer. Makes 2 generous servings.Comments: Very good served with French bread or corn bread. May use drained canned tomatoes.
