Ingredients/Components

  • oil - 1/4 c
  • dry mustard
  • pepper - 1 tsp
  • grated Parmesan cheese - 4 oz
  • sliced zucchini - 2 item
  • Mozzarella cheese, shredded - 8 oz
  • sliced carrots - 2 item
  • rosemary - 1 tsp
  • cooked vermicelli - 6 oz
  • garlic wine vinegar - 1/2 c
  • small jars artichoke hearts - 2 item
  • sliced Italian dried salami - 6 oz

How to make artichoke pasta casserole:

Mix vinegar, oil, mustard, rosemary and pepper. Add artichoke hearts, salami, carrots and zucchini. Mix well. Add cooked and drained vermicelli and combine all ingredients together. Stir in Mozzarella cheese. Bake at 350° covered with foil. After 45 minutes, remove foil and top with the Parmesan cheese. Bake for 15 additional minutes.

This dish can be served as a side dish or as a main course.
