Zucchini tomato bake
Ingredients/Components
- salt - 1 tsp
- oil - 3 Tbsp
- pepper - 1/4 tsp
- grated Parmesan cheese - 3/4 c
- sliced zucchini - 2 c
- basil - 1/2 tsp
- onion, chopped - 1 item
- parsley - 2 Tbsp
- cloves garlic, crushed - 2 item
- sliced yellow squash - 2 c
- packets instant chicken broth - 2 item
- peeled, sliced fresh tomatoes or 1 can tomatoes, drained - 2 c
How to make zucchini tomato bake:
Saute first 3 ingredients until tender. Add remaining ingredients (except cheese) and simmer approximately 10 minutes or until zucchini is crisp and tender. Transfer to baking dish. Remove most of the broth; it should be wet, not soupy. Top with cheese and bake at 375° for 30 minutes.Recipe categories: Squash, Vegetables, Main dish.
