Ingredients/Components

  • salt - 1 tsp
  • oil - 3 Tbsp
  • pepper - 1/4 tsp
  • grated Parmesan cheese - 3/4 c
  • sliced zucchini - 2 c
  • basil - 1/2 tsp
  • onion, chopped - 1 item
  • parsley - 2 Tbsp
  • cloves garlic, crushed - 2 item
  • sliced yellow squash - 2 c
  • packets instant chicken broth - 2 item
  • peeled, sliced fresh tomatoes or 1 can tomatoes, drained - 2 c

How to make zucchini tomato bake:

Saute first 3 ingredients until tender. Add remaining ingredients (except cheese) and simmer approximately 10 minutes or until zucchini is crisp and tender. Transfer to baking dish. Remove most of the broth; it should be wet, not soupy. Top with cheese and bake at 375° for 30 minutes.
