Ingredients/Components

  • sugar
  • pkg - 2 oz
  • flour
  • boiling water - 2 c
  • whipped cream - 1 c
  • miniature marshmallows - 1 c
  • egg, beaten - 1 item
  • mandarin oranges, drained
  • sharp Cheddar cheese, shredded - 1/2 lb
  • 2 1/2 can pineapple chunks, drained and cut reserve juice
  • drained fruit juices - 1 c
  • 2 1/2 size can apricots, drained
  • juice, reserved - 1 c

How to make apricot salad:

Topping:1/2 c. sugar1 c. juice, reserved1/2 lb. sharp Cheddar cheese, shredded2 heaping Tbsp. flour1 egg, beaten1 c. whipped cream Combine reserved juices from pineapple, oranges and apricots and enough water to make 2 cups of fruit juice. Set one cup aside. Dissolve jello in boiling water and 1 cup of juice. Chill until partially set. Add pineapple, oranges, apricots and marshmallows into jello. Stir well. Put mixture in large glass baking dish and refrigerate until set.

To Prepare Topping: Cook together, except cream and cheese, until thick. When cool, add the whipped cream or Cool Whip. Spread on top of jello. Sprinkle with cheese.
