Ingredients/Components

  • cinnamon - 1/2 tsp
  • vanilla - 1 tsp
  • butter or margarine - 1/2 c
  • nutmeg - 1/2 tsp
  • baking powder - 2 tsp
  • egg - 1 item
  • shredded coconut - 1/2 c
  • shredded carrots
  • honey - 1/3 c
  • orange juice - 1/3 c
  • grated orange rind - 2 tsp
  • whole wheat pastry flour - 2 c

How to make energy bars:

In small mixing bowl, combine the flour, baking powder, cinnamon and nutmeg. In medium mixing bowl, beat butter until fluffy. Beat in honey, egg, vanilla and orange rind. Beat in the dry ingredients alternately with the orange juice. Stir in coconut and carrots. Pour into a greased or parchment-lined 9 x 13-inch baking pan. Bake at 325° for 20 to 30 minutes. Cool and cut into bars. Makes 24 bars.

These are terrific for lunch boxes and as a pick-me-up midday slump.
